Tip #3: Don’t worry about over brewing rooibos. Japanese scientists, such as Matatoshi Nakano, have discovered that the effect of free radicals in the process of aging and the decline of the immune system is limited by the anti-oxidants in Rooibos. If Rooibos is brewed for longer than 10 minutes, the anti-oxidant activity becomes much higher.

Other Interesting Facts: 1) 2oz of tea will give you 80 cups of tea if steeped three times 2) Rooibos is caffeine free and packed with minerals such as copper, iron, fluoride, zinc and potassium. Rooibos is great for kids too! 3) Green rooibos is often preferred over red because it contains a considerably higher level of antioxidants. The fermentation step does decrease the antioxidant activity of the tea, possibly due to the 25% loss of polyphenolics during the process. 4) Rooibos possesses very little tannins, so it lacks the bitter astringent taste experienced with many other teas from the plant Camellia sinensis.
